Bill Clinton is on a plant diet… but is he truly a vegan. In this CNN interview, he claims the benefits of a plant diet; however he indicates that he has fish once in a while. Although it’s not often, it’s still once in a while. But who am I to judge… I am a vegetarian after all and not a vegan. I find it pretty amazing and inspiring that someone of his stature would come out publicly and discuss openly about a diet that pretty much goes against Factory Farming which dominates the food industry in the land of our cousins just south of the Canadian Border.

What about Al Gore? Does anyone know whether he is? In “An Inconvenient Truth” the movie, which is now available as a book; he’s brought together leading-edge research from top scientists around the world; photographs, charts, and other illustrations; and personal anecdotes and observations to document the fast pace and wide scope of global warming. Shouldn’t he be vegan too? After all, the meat industry is the world leader in pollution of the soil, water and air (horrendous smell and air bacteria and more) so who would want to be part of the ongoing destruction.

What about George bush? Lol ha ha ha kidding. He probably doesn’t know what a vegan is and obviously puts blind folds to over look the Factory Farming industry… dumb ass.

In summary; congrats to Bill. Food wise and health wise… he is a step ahead. Way to go.
For info on Bill’s diet; he would appear to follow a diet based on Dr. Gundry’s research.

Here’s a great article I found in the Globe & Mail regarding animal welfare. I have been suffering from the omnivore dilemma for the last 10 years or so. However, although I have been somewhat vegetarian for the most part of it; I still have periods of time where I eat poultry. My family for the most part will consume animal products. However, we buy our poultry from local farmers where you can actually see the farm and the animals outside.

Reading this article got me so worked up that I can’t actually concentrate at work at the moment. I may intend to change my job in the near future to a career that takes animal into consideration and care for them with kindness. I’ve been thinking about it for a while and I intend to act on it. We have 2 cats at home and they are spoiled to death. We care so much for them and play around that they are pretty much acting like dogs…lol.

I urge the government to do something right now. These archaic laws must be changed now. Not in the near future: NOW! Every pay check I have money going to various and recognized organization for animal welfare. I feel good about doing this. I constantly sign petitions for things to change but still feel powerless.

If anybody has ideas on how to act on this in very proactive ways; let me know.

One of my favourite salad recipe I thought I’d share.

Tomato Salad with Bananas

2 fresh bananas
1 table spoon of lemon juice
2 large tomatoes
2 table spoons of Balsamic vinegar
6 table spoons of sunflower oil
Salt, Pepper, a bit of brown sugar and fresh Parsley to taste

Peel and slice bananas and sprinkle with lemon juice
Dice tomatoes and put them in a bowl with the bananas

Salad dressing: mix vinegar, oil, salt, pepper, sugar then add the dressing to the bananas and tomatoes and then sprinkle fresh parsley et voila.

Good evening; Here are some of the recipes that I invented in the last 24 hours. One was today’s lunch and the other’s tomorrow’s lunch. You can try at your own risks ha ha ha… You will note that I do not use oil or rarely for my cooking. I usually prepare 2 servings 2.

You can accompany all dishes with salad, or potatoes, or vegetable… just be creative.

Tofu and Tuna Dijon Stir-fry (this isn’t a vegetarian recipe)

½ package of firm tofu
1 can of Albacore Tuna
1 celery stick sliced finely
½ cup of vegetable broth
1 ½ table spoon of Dijon mustard
Salt and Pepper

Step 1:
Combine the vegetable broth and Dijon mustard.

Step 2:
Shred and sautee the tofu in a frying pan for about 5 minutes or until golden brown
Add the tuna and celery and stir for another 3-5 minutes.
Pour the mix of vegetable broth and Dijon mustard and simmer until heated,
Salt and pepper

Et voila.

Sweet Golden Tofu (vegetarian)

½ package of firm tofu cubed
¼ of Red, ¼ of Green and ¼ of Yellow bell pepper (you can add more if you wish)
3 chives finely chopped
2 table spoons of Brown Sugar
¼ cup of Safflower oil

Sautee the bell peppers in a pan
Add the tofu until nicely brown.
Combine the oil and brown sugar and pour into pan; simmer until heated and remove quickly.
Add chives

Et voila.

Is there a publisher out there who’d let me write a comfy food vegetarian/non-vegetarian cooking book for people with/without IBS (wink wink)?

For over a decade (since my adolescence), I have been experiencing digestive issues (IBS). I will admit that it took me years to accept what I’m about to write but I can now honestly acknowledge that, in addition to some food intolerance, there is a stress component to my problem. I have tried many things to heal/cope with this condition such as; medication, digestive enzymes, food allergy tests, naturopath, food elimination process, various lifestyles (vegetarian, vegan, and omnivore), yoga and meditation (which are somewhat helpful), and I’m sure a few more that I just can’t think of on the spot.

What’s worked for me I’m currently on a low dosage mood stabilizer, I take glutamine (1/3 of a tea spoon every day or so), I do yoga, lots of breathing exercises (I have learned to let my tummy relax) and I exercise regularly. I avoid products containing wheat and/or dairy. I also try to avoid rice including gluten free products which are mostly rice based (somehow, for me, it’s made a huge difference). I take a good multivitamin, calcium and B12 et voilà.
Q: I can already hear your question: What do you eat then? (which I get all the time)
A: Easy; Protein wise, I eat tofu, legumes, beans, eggs and soy milk (some people have issues with soy milk; I recommend that you look for a brand that contains no oil). Apart from that, I eat vegetables and fruits (in moderation at least for me), the potato family (mmmm…), salad (again in moderation), and somehow I can consume some spelt products (as long as they do not contain any or the other products that I can’t have). I have also discovered recently that eaten in small quantities, oatmeal would appear to be well tolerated by my digestive system.

As you can see, I have covered pretty much all the food groups.
I will not get into my life story here but I thought I’d share ideas and ways that I found to cope with this irritable syndrome.
