One of my favourite salad recipe I thought I’d share.

Tomato Salad with Bananas

2 fresh bananas
1 table spoon of lemon juice
2 large tomatoes
2 table spoons of Balsamic vinegar
6 table spoons of sunflower oil
Salt, Pepper, a bit of brown sugar and fresh Parsley to taste

Peel and slice bananas and sprinkle with lemon juice
Dice tomatoes and put them in a bowl with the bananas

Salad dressing: mix vinegar, oil, salt, pepper, sugar then add the dressing to the bananas and tomatoes and then sprinkle fresh parsley et voila.

Good evening; Here are some of the recipes that I invented in the last 24 hours. One was today’s lunch and the other’s tomorrow’s lunch. You can try at your own risks ha ha ha… You will note that I do not use oil or rarely for my cooking. I usually prepare 2 servings 2.

You can accompany all dishes with salad, or potatoes, or vegetable… just be creative.

Tofu and Tuna Dijon Stir-fry (this isn’t a vegetarian recipe)

½ package of firm tofu
1 can of Albacore Tuna
1 celery stick sliced finely
½ cup of vegetable broth
1 ½ table spoon of Dijon mustard
Salt and Pepper

Step 1:
Combine the vegetable broth and Dijon mustard.

Step 2:
Shred and sautee the tofu in a frying pan for about 5 minutes or until golden brown
Add the tuna and celery and stir for another 3-5 minutes.
Pour the mix of vegetable broth and Dijon mustard and simmer until heated,
Salt and pepper

Et voila.

Sweet Golden Tofu (vegetarian)

½ package of firm tofu cubed
¼ of Red, ¼ of Green and ¼ of Yellow bell pepper (you can add more if you wish)
3 chives finely chopped
2 table spoons of Brown Sugar
¼ cup of Safflower oil

Sautee the bell peppers in a pan
Add the tofu until nicely brown.
Combine the oil and brown sugar and pour into pan; simmer until heated and remove quickly.
Add chives

Et voila.
